Menu help please - servings for a buffet


Hello weddit! I am really struggling with how much food to order and my caterer isn't being much help. Could y'all provide some guidance?Setting: Outdoors, August (could be warm/hot, though the ceremony and reception will be decently well shaded)Pre-ceremony: Iced tea and waterCeremony 5-5:30Cocktail hour 5:30-6:30: Hummus platter (with tabouli, pita, etc) - 30 servings Spanikopita - 48 servings Crostini - 48 servingsBuffet dinner: Rolls - 55 servings Roasted tomatoes w/balasamic - 55 servings Spinach salad - 55 servings Roasted root vegetables - 55 servingsCreamy pasta - 55 servings Puttanesca - 55 servings Vegetable tagine - 20 servings Mushroom cannelloni - 30 servingsCake - 66 servingsWe're expecting 55 people. We'd initially planned on having 2 or 3 mains. The creamy pasta is dirt cheap as is the puttanesca so I'm happy to have plenty of those to prevent running out of food. The tagine and cannelloni are much more expensive. But certainly we don't need 55 servings of 4 main dishes, even if it is a buffet?I'm also tempted to bump up the spanikopita and crostini to 60 servings (those have to be in dozens) but my partner doesn't think folks tend to be that hungry during cocktail hour. We could also bump up the hummus platter.Would love any words of wisdom!!
